Collection: Dry-Aged Beef

Our dry aged beef hangs for at least 28 days in our own aging room, which has a wall of Himalayan salt bricks and tightly controlled temperature and humidity. Over that time the meat loses moisture and gets more tender, and the flavor turns richer and a little nutty. It's the same idea as an old-school steakhouse, just done in-house.
